I’ll be the first to admit that I never seem to have enough time – I find myself running to or from work, doing the Cubs run, or the Scouts run, dropping off at life-guarding, doing the shopping, stacking and unstacking the dishwasher, making packed lunches, cleaning, cooking tea, eating tea, planning and assessing for school…and at some point in all of that actually sitting down for a moment or two to catch my breath! Life never seems to stop. So I’ve adopted a few little ‘life hacks’ to try and make things a little simpler!
We were really excited at ‘What me and the Boys say HQ’ when we were asked if we’d like to be part of a creative campaign to create our ULTIMATE burger for National Burger Day. It was reported recently that Prince William’s favourite snack is a Welsh Lamb burger topped with Snowdonia Cheese, bacon and a fried egg…and seeing as our challenge was to use Welsh Lamb as the main ingredient, it seemed only right that I put my creative mind to the task of creating a Welsh Burger…so I did just that!

I LOVE getting creative in the kitchen, so when I was offered the opportunity to take part in the Oreo Wonderfilled Recipe Challenge I just COULD NOT resist! And as the challenge was to come up with a NEW wonderfilled recipe using one or both of the new flavours of Oreo, I knew I would have to get creative in the kitchen too!
After putting my serious thinking cap on, I came up with my idea…
So please may I present my Peanut Butter Oreo and Raspberry Ice-Cream Cake with Golden Oreo Snowmen…and here’s how to make it:
It’s not often we get to have a BBQ – the British Summer weather doesn’t seem to be that kind and opportunities for eating ‘Al fresco’ are usually few and far between!
So when we do get chance to get the barbie on, I like to pull the stops out and create something different and tasty!
One of my FAVOURITE dishes to make has to be my Lemon and Garlic Chicken skewers – they are really easy to prepare, quick to cook and kind on the pocket too as they use cheaper chicken thigh fillets as a pose to more expensive chicken breasts. It’s an easy but tasty dish that’s perfect for relaxing on a summers evening! Great served with a Greek style salad in a pitta bread – or just straight off the skewer! Continue reading
We were so excited when we were chosen to be part of a special Minions themed challenge from Green Giant, purveyors of the UK’s favourite sweetcorn! Green Giant has teamed up with Universal Studios to celebrate the recent launch of the brand new Minions movie which is OUT NOW in the cinemas….and as part of the build up they invited several bloggers to come up with theirr own ‘minion inspired’ healthy snack, recipe or meal.
My children LOVE sweetcorn, LOVE the minions – and LOVE fun, healthy food…so I knew this challenge would be just right for us!
However, when I sat down to come up with a sweetcorn recipe for the challenge, I really struggled to find something different…so I decided we would work on making a meal fun instead…
The boys LOVE roast dinners, and so does Little Miss…so I decided we’d work on making a ‘Mini Minion Roast Dinner’ – something to give us a healthy balanced meal, but with a minion twist! Continue reading
