Baking for Boys – with a little help from Duerr’s!

You will know by now that we LOVE getting creative in the kitchen, and at the drop of a hat, without an excuse needed, we will get making and baking! So when Duerr’s asked if we would be interested in their new ‘Baking for Boys’ videos we just couldn’t help but say YES!

With the end of the Great British Bake Off, The UK’s oldest family run jam and marmalade makers Duerr’s were worried that the nation would be missing its baking fix! So fifth generation jam maker Richard Duerr and Duerr’s Operations Director and former baker Paul Dinneen teamed up to bring create ‘Baking for Boys’ – a mini series of baking masterclasses, rustling up the ultimate Marmalade Bread and Butter Pudding, Victoria Sponge, Chocolate Orange Cake and Strawberry and Vanilla Ripple Ice Cream.
We were sent all the Duerr’s jams and marmalades we would need to make the recipes… and then it was over to us!
To start with, we decided to go for a warming winter classic – the ultimate marmalade Bread and Butter pudding – yum! Making the pudding was a doddle using the short masterclass video as a guide:

We started by cutting the chocolate chip brioche into triangles and layering them in a dish. The recipe uses plain brioche, or suggests fruit pannettone… but I though chocolate chip brioche would go really nicely with the orange of the marmalade so decided to give it a go!

This then had the melted butter drizzled over the top!

We then made the custard using double cream, milk, eggs and egg yolks and caster sugar. I tend to use tinned custard and was really surprised at how easy it was to make it from scratch – something I’ll definitely do again!
Ready for the oven
We poured the custard over the top of the layered brioche, then set the pan in a water bath in the oven and baked it for about 35 minutes!
Duerrs marmalade
When cooked, we removed it from the oven ready for the all important marmalade. We put 3 tbsp of the Duerr’s Seville Orange Marmalade into a bowl and stirred a little to loosen it… the using a pastry brush, brushed it over the top of the hot bread and butter pudding to add a delicious, shiny glaze and orange flavour!

And there is is – our ultimate chocolate and marmalade bread and butter pudding! We served it with ice-cream… and within minutes the WHOLE LOT was gone!
